Okay, first of all did you know that there’s such a thing as National Pigs in a Blanket Day? Well, now you do. It’s celebrated yearly on April 24. The more you know!
We grew up eating this timeless treat. It was typically made with some variation of a biscuit or pastry dough. I’ve updated this classic dish with a keto/low-carb twist. It’s super easy and fast to make! These pigs in a blanket are perfect for entertaining; they make a fantastic party snack to accompany your favorite cocktails. They’re also perfect for dipping and sharing on an intimate movie night, or even just for plain old breakfast.
How to Make Almond Flour Pigs in a Blanket | Keto, Low-Carb

The first step to making my version of pigs in a blanket is to melt two cups on shredded mozzarella cheese in a glass bowl. You’ll do this by microwaving the cheese for about two minutes, or until melted and creamy.

Next, you’ll add almond flour, an egg, a bit of butter, minced garlic, and some herbs & seasonings. One seasoning that I think you’ll absolutely love is Everything Bagel Seasoning. It’s totally optional, but let me tell you – it’s SO good. You get all the flavors of a delicious bagel without the added carb count. Italian seasoning is another option, but feel free to add any seasonings that you love. The best part about this recipe is that you can customize it however you please.

You’ll want to mix all of these ingredients very well until one cohesive dough forms. No need to use any fancy mixer – a spoon will do just fine. Just ensure that every ingredient is well distributed.
Cocktail sausages/little smokies
In small portions, you’ll want to remove the dough from the bowl, stretch it a little, and wrap around each individual cocktail sausage/little smokie. Don’t worry if it doesn’t look perfect. That’s perfectly fine. Line each dough wrapped sausage in a parchment paper lined baking sheet.

Finally, you’ll baked the pigs in a blanket for 20-25 minutes, or until golden brown, in a 350 degree oven.
If you wish, you can brush your finished pigs in a blanket with additional garlic, butter, and seasonings.

Almond Flour Pigs in a Blanket | Keto, Low-Carb
Ingredients
- 2 Cups Mozzarella Cheese, shredded
- 5 Tbsp. Almond Flour
- 1 Large Egg
- 1 tbsp. Butter
- 1 Garlic Clove (Minced)
- 1/2 tbsp. Fresh or Dried Herbs or Italian Seasoning (optional)
- 1/2 tbsp. Everything Bagel Seasoning (Optional)
- 14 oz. Package Turkey Smokies/Cocktail Sausages (Beef or Pork optional)
Instructions
- Preheat over to 350°
- In a glass bowl, add the mozzarella and microwave for two minutes, or until creamy and smooth. Allow to cook for about one minute.
- To the cheese, add the almond flour, egg, butter, garlic, herbs, and any other desired seasonings. Mix well, allowing the ingredients to blend and form one cohesive dough.
- A little at a time, take portions of the dough and wrap around each individual sausage.
- Bake for 20-25 minutes, or until golden brown.
- Top with additional melted butter, garlic, or seasonings (optional)

Made the cheesy beef empanadas…….a little bit sticky so I rolled the dough between 2 sheets of baking paper. Success…..they were gone as soon as they were baked and cooled, family has requested a freezer batch each! Thank you.
